Ingredients:
For the Meatballs:
- 1 lb (450g) ground turkey (lean)
- 1/4 cup grated Parmesan cheese (optional for extra flavor)
- 1/4 cup breadcrumbs (or use almond flour for a gluten-free option)
- 1 egg
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil (for cooking)
For the Zucchini Noodles:
- 2 medium zucchinis (spiralized into noodles using a spiralizer or a vegetable peeler)
- 1 tbsp olive oil
- 1 clove garlic, minced
- Salt and pepper, to taste
For the Marinara Sauce:
- 1 1/2 cups marinara sauce (store-bought or homemade)
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes (optional for a little heat)
- Fresh basil or parsley for garnish (optional)
Instructions:
-
Make the Turkey Meatballs:
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the ground turkey, grated Parmesan (if using), breadcrumbs (or almond flour), egg, minced garlic, oregano, basil, salt, and pepper. Mix everything together until fully combined.
- Roll the mixture into 1-1.5 inch meatballs (about 16-18 meatballs).
- Heat 1 tbsp olive oil in a skillet over medium heat. Add the meatballs and cook for 5-6 minutes, turning them until they are golden brown on all sides.
- Once browned, transfer the meatballs to a baking sheet and bake in the oven for 12-15 minutes or until cooked through (internal temperature should reach 165°F or 74°C).
-
Prepare the Marinara Sauce:
- While the meatballs are baking, heat the marinara sauce in a small saucepan over low heat.
- Stir in dried basil, oregano, and red pepper flakes (if using). Let it simmer for about 5-10 minutes to heat through and allow the flavors to meld.
-
Prepare the Zucchini Noodles:
- While the sauce and meatballs cook, heat 1 tbsp olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the zucchini noodles (zoodles) to the skillet and cook for 3-5 minutes, stirring occasionally, until the zucchini noodles are tender but still slightly crisp. Be careful not to overcook, or they can get soggy.
- Season with a pinch of salt and pepper.
-
Assemble the Dish:
- Once the meatballs are done, place a serving of zucchini noodles on each plate.
- Top with a few turkey meatballs and spoon marinara sauce over the meatballs and noodles.
- Garnish with fresh basil or parsley if desired.
-
Serve and Enjoy:
- Serve immediately and enjoy this low-carb, healthy, and satisfying meal!
